Mama Oakland's Enchilada Casserole

My mom busted out an old school dish last night, and my taste buds were in heaven!!! It was enchilada casserole...she even put it in the old casserole dish!! They say that nostalgia is what people are turning to right now to feel good....and it works!!!! Totally took me back to my childhood. I posted a picture of it on my facebook page last night and people were asking for the recipe. So here it is. Keep in mind....my mom is old school. She rarely follows a recipe to a tee. So here is the recipe.... tweak it to make it your own! (that's what she does!). She used chicken last night and it was DELISH! Enjoy!

Enchilada Casserole

1 pound ground beef (or chicken)

1 can cream of mushroom soup

1 large can of cream of chicken soup

1 large can of enchilada sauce

1 medium onion

1 cup milk

1/2 pound grated cheddar cheese (or any kind you want)

Tortillas

Brown the meat and onion in butter.Add soups, milk and salt and pepper to taste.

Cut tortillas in quarters, alternate layers of meat mixture, tortillas and grated cheese.Continue until mixture is all used…end with cheese on top.

Bake at 350 degrees for one hour.
