Cooking with Lora: Hearty Beef Soup

Ingredients

  •  1-2 lbs Ground beef
  • 1 medium onion coarsely chopped
  • 4 cups of water (or beef broth)
  • 28 oz (3 cups) can of tomatoes (can use fresh tomatoes) 
  • 3 beef bullion cubes
  • celery salt
  • thyme
  • parsley
  • basil
  • 10 whole peppercorns
  • salt with accents
  • bay leaf (broken up)
  • about 4  carrots (chopped)

Directions

Brown ground beef and drain fat.  Then add the onions to the pan until slightly browned.

Combine water, tomatoes, bullion cubes, dry seasonings and ground beef/onions into a large pot over medium heat.  Let simmer for at least two hours.
